Chef Timothy Dean comes to Baltimore with an impressive set of credentials: working with Jean Louis Palladin at the Watergate, opening restaurants in Laguna Beach and New York City, and his own acclaimed restaurant at the St. Regis in Washington. Now he’s come to Baltimore and opened Timothy Dean Bistro in Fells Point. The interiors feature bold colors and crisp modern lines, courtesy of the firm of Rita St. Clair. The menu offers New American bistro fare such as grilled ahi tuna with spinach and garlic confit, smoked aged rib-eye steak with potato galette and roasted shallot sauce, and sage-roasted lamb chops with savoy cabbage and fig sauce.
