The new Bagby Pizza, which opened in Pikesville in late summer, is not the homey brick BYO that launched in 2009 in Harbor East. This Bagby—with the subtitle ”The Way You Want It”—may have the flat-crust pies we know and love, but the environment is sparkling and efficient, with workers in green polos and disposable gloves sprinkling bits of fennel sausage or spinach leaves, slices of eggplant or dollops of caramelized onion, to order, on uniform discs of dough. It’s Chipotle-style pizza: The raw pie slides into the oven and lands, in a cheerful green-accented cardboard box, on the counter minutes later. The restaurant also offers quick-assembled salads, available with your choice of fixings or as daily specials (at opening, local peaches were paired with goat cheese and arugula). This Bagby, at the Festival at Woodholme, is the first of what the restaurant group hopes will become a chain. Number two is slated to open at the new 50-acre Foundry Row complex in Owings Mills.
