SaltBilling itself as “a New American tavern,” Salt is nestled in the heart of downtown’s Butcher’s Hill neighborhood. A new project developed by Jason Ambrose, formerly sous chef at Soigne and Henninger’s, the small bistro is divided into a lively bar and lounge up front, and an intimate dining room at the rear. Yes, it has the requisite hardwood floors and exposed brick walls, but the design is given a decidedly modern slant, with suspended geometric clusters of colorful lamps and contemporary touches, courtesy of local design firm Riley & Rohrer. The menu also offers modern takes on traditional dishes, such as braised lamb stroganoff with porcini mushrooms, spinach and wide-noodle pasta; seared pork chops with vanilla-scented apples and cheddar potato gratin; and our favorite: the foie gras and sirloin slider burger.
