Spinach and Ricotta Pizza with Smoky Bacon

Serves 6
1 16-ounce pizza dough ball Extra-virgin olive oil
4 cloves fresh garlic, peeled and chopped finely
2 cups shredded mozzarella cheese
3 medium ripe tomatoes thinly sliced
1 cup grilled chicken
2 teaspoons dried oregano
Salt and freshly ground black pepper

Preheat oven to 500 degrees. Roll pizza dough on a floured surface and place on a cookie sheet. Brush dough with extra-virgin olive oil and season with salt. Top with a sprinkling of chopped garlic, then a 1⁄2 cup of mozzarella cheese. Top the cheese with tomato slices and cooked chicken.  Season the whole pizza with salt and pepper then top it with the remaining mozzarella cheese and dried oregano. Cook the pizza until the crust is golden brown (10 to 12 minutes). Wait 3 to 4 minutes to cut the pizza so the cheese and toppings don’t run together then serve.
