Shake Shack docked at the Inner Harbor; Smashburger fired up in Fells Point and now, the new Towson Square development lands Bobby Flay. The celebrity chef, whose career began in 1991 with New York’s Mesa Grill and contin-ued with Food TV celebritydom, is now known for his chain of burger joints, Bobby’s Burger Palace. (Towson will be number 19—and there’s also one at the Maryland Live! Casino in Hanover.)
The menu is a cross-country odyssey with Angus beef, chicken and turkey burgers inspired by Vegas (white cheese and Fresno chiles), Philadelphia (provolone and griddled onions) and L.A. (avocado, cheddar and water-cress). Shakes range from the trendy (blueberry-pomegranate, dark chocolate) to the traditional (strawberry, vanilla bean) and there are the requisite fries and onion rings. If you’re nominally health-conscious, forgo the bun and order a patty on salad greens. The brightly decorated interior (shiny, snaking countertops; green leather seats; yellow accents) holds 65 burger lovers with an outdoor terrace that seats 24.
