Serves four

9 tablespoons olive oil
3 tablespoons balsamic vinegar
1/4 teaspoon sugar and a pinch of salt
1 bag mesclun greens
2 pears, cored and thinly sliced
3/4 cup caramelized walnuts
1/4 pound gorgonzola cheese

Whisk together olive oil, vinegar, and sugar and salt mixture. In a salad bowl, mix greens, pears, walnuts together. Toss salad with dressing and top with gorgonzola cheese.
