Serves four
pie crust pastry (for single pie)
4 large eggs
1 pound crabmeat, picked
1 cup Swiss cheese, shredded
1/3 cup onion, finely chopped
2 cups half and half
1 teaspoon salt
1/4 teaspoon freshly ground pepper
paprika as needed

Line pastry in a nine-inch pie plate. Beat eggs slightly; then beat in remaining ingredients. Pour mixture into pie plate. Cook uncovered in 425-degree oven for 15 minutes. Reduce oven temperature to 300 degrees for 30 minutes. Let stand 10 minutes before cutting. Sprinkle with paprika.
