From Patricia Wells’ “Bistro Cooking” cookbook. Even pale winter supermarket tomatoes can become flavorful in this preparation. The long roasting time caramelizes their juices and makes them very sweet.

8 plum tomatoes
8 garlic cloves
1/2 cup bread crumbs
1/4 cup chopped parsley
3 tablespoons olive oil
Salt and pepper

Preheat oven to 400 degrees. Arrange the tomatoes, cutside up, in a large baking dish. Season with salt and pepper. Slice garlic thinly and sprinkle over the tomatoes. Combine the bread crumbs and parsley, and scatter the mixture over the tomatoes. Drizzle the oil over the tomatoes. Bake, uncovered, until the tomatoes are soft, browned, and sizzling; about 1 hour. Serve immediately. Serves 6.
