Lavender & Cardamom Mini Buttermilk Pancakes


serves 4 – 6

8 ounces unbleached all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1 tablespoon sugar
A pinch of salt
2 eggs, beaten
11⁄4 cups buttermilk
1 teaspoon crushed lavender
1 teaspoon cracked black pepper
1⁄2 teaspoon cardamom
Oil, for cooking

Mix together the first 5 ingredients. Add the eggs and buttermilk and stir until incorporated. Fold in the lavender, pepper and cardamom. Drop by the spoonful onto a hot lightly greased nonstick skillet. Flip when bubbles start to form and cook until light brown and crispy.
