Summer Vegetable Pie

1 unbaked 9-inch pie shell at room temperature
4 to 6 peeled, sliced tomatoes, drained
2 medium zucchini, sliced and grilled
2 medium yellow squash, sliced and grilled
2 roasted red peppers
2 tablespoons fresh basil
salt and pepper to taste
1/2 cup mayonnaise
1/2 cup Dijon mustard
1/3 cup gruyere cheese
1/3 cup sharp cheddar
1/3 cup Swiss cheese
1/4 cup freshly grated Parmesan cheese

Preheat oven to 350. Mix the mayonnaise with all of cheeses except the Parmesan. Spread the mustard, lightly covering the pie shell. Arrange a layer of tomatoes and basil over the mustard. Dot with remaining mustard. Layer the zucchini, squash and red peppers. Spread the mayonnaise cheese mixture. Sprinkle grated Parmesan over the top and bake for 35-40 minutes.
