These are a cross between a cracker and a savory cookie, if there is such a thing. Paired with a glass of red wine, the crisps make a wonderful before-dinner nibble.
1/2 cup softened butter
1/2 cup finely shredded cheddar cheese
1 cup flour
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 cup pecan halves
In a mixing bowl, cream butter and cheese. Combine flour, paprika and salt; add to creamed mixture. Shape dough into 1-inch balls. Place 2 inches apart on ungreased baking sheets. Top each ball with a pecan; press down to flatten. Bake at 350 degrees for 15 to 20 minutes or until golden brown. Remove to a wire rack to cool.
Makes 2 dozen crisps.
