This is flawless and simple. There aren’t too many side dishes you can do on the grill and this is one of them. Everybody will say, “My goodness what is this?” I like to use unusual vegetables for grilling, good thick dense ones like beets or carrots. You wouldn’t think they would be great on the grill, but they are. I use this marinade on everything. It gives vegetables a wonderful flavor and takes on a whole different flavor with meat or fish.

A variety of vegetables cut into thick pieces (halve the carrots and beets)
Cut any available vegetable into large thick slices and marinate them for about 3 hours or overnight. Grill till they’re still a little firm; don’t overcook.
