Serves six to eight
1cured ham, bone-in (3-6 pounds)
2 cups brown sugar
2 12-ounce cans whole peaches in sweet syrup
Preheat oven to 400 degrees. Place the ham in a roasting pan and score it with a knife to make a checkered pattern. Rub the ham all over with brown sugar. Pour the peaches and their juice over the ham, wetting the brown sugar. Rub the peach juice into the brown sugar to form a paste that covers the ham. Scatter the peaches on the bottom of the roasting pan and place in oven. Baste the ham every 10 minutes until it’s golden brown. Cook for 45 minutes. Keep the cooked ham under tin foil in a warm place until ready to serve. Don’t forget to spoon the caramelized peaches and collected juices from the roasting pan on top of your sliced ham. My kids love it!
