Makes 12
1 cup all-purpose flour
1/2 cup unsalted butter
1 1/4 cup granulated sugar
2 whole eggs
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon almond flavoring
1/2 cup blanched almonds, chopped
1/2 cup maraschino cherries
Mix 1 cup flour, butter, and 1⁄4 cup sugar in a food processor and press into an 8-by-10-inch baking dish. Bake for 25 minutes in a preheated 325-degree oven.
Beat eggs with 2 tablespoons flour, 1 cup sugar, baking powder, and almond flavoring. Fold in almonds and cherries and spread onto the precooked base. Cook for 20 minutes or until mixture no longer wiggles in a preheated 325-degree oven. Let cool before you cut into 2-inch squares.
