Makes 2 pies
3 large sweet potatoes
2 1/2 cups sugar
1/2 teaspoon baking powder
4 eggs
3/4 cup margarine
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon extract
dash of nutmeg
cinnamon to taste
2 pie shells
Preheat oven to 350 degrees. Boil potatoes until tender. Peel and place in large mixing bowl. Stir in sugar and baking powder. Add eggs, margarine, and milk and blend well. Add vanilla and lemon extracts, nutmeg, and cinnamon. Pour into pie shells and bake one hour or until golden brown.
