Roasted Whole Goose with Caramelized Apples

Serves 4

1 whole goose, 5-8 pounds
6 tablespoons softened butter
8 apples, cut in half
1 cup sugar

Pat dry the goose inside and out with paper towels and season inside and out with salt and pepper. Place the goose on a wire rack on top of a roasting pan. Tie the legs together with butcher’s twine and tuck the wings underneath the bird. Rub the entire topside of the goose with four tablespoons of butter. Place the bird in a 450-degree preheated oven for 20-25 minutes or until the skin is a golden brown. Turn down the oven to 325 degrees and roast the goose another 50-60 minutes until done. Cover with tin foil and let rest for 15-20 minutes in a warm place then slice the goose like a turkey. For the caramelized apples, slice apples in half and place in a hot sauté pan with remaining butter and sugar. Cook until the sugar turns golden then place pan with apples in a 350-degree oven for 15 minutes. Place apples around roasted goose and serve with your favorite sides—mashed potatoes, whipped sweet potatoes, or roasted vegetables of carrots, butternut squash, onion, and parsnips.
